Red onion and pepper frittata
Frittatas are an endlessly versatile dish that are equally as delicious as a snack or a main dish for a meal. You can serve them warm or cold and they are a perfect pre-prepare option for lunches on the go.
Ingredients:
Large knob of butter
½ red onion, finely sliced
½ red pepper, seeded and finely sliced
½ green pepper, seeded and finely sliced
½ yellow pepper, seeded and finely sliced
6 eggs
Some freshly ground black pepper.
Method:
1. Melt the butter in a heavy frying pan and lightly fry the onion and peppers for about a 10 minutes.
2. Whisk the eggs and pour them into the frying pan. Give the whole mixture a good stir and cook on a low heat for about 15 minutes, or until the whole mixture is set.
3. Gently tip out onto a plate, serve a slice immediately and/or chill for the lunch box.
