Three diet-friendly summer desserts

Summer is the perfect time to enjoy the sweetest fruits and in-season ingredients – Here are three of the simplest summer recipes for delectable, diet-friendly desserts using the best of the season’s produce. 1) Summer Berries & Raspberry Dip: Ingredients: 200g strawberries, raspberries, blackberries, 250ml double cream, 250ml natural live yogurt, 2 tablespoons kirsch (optional), additional berries to use as ‘dips’. Blend all ingredients until creamy and smooth. Place mixture in a small bowl in the middle of a platter and surround by berries. 2) Baked BBQ Bananas: Ingredients: 4 peeled bananas, 4 pinches of cinnamon powder, chopped zest of half an orange, 1 vanilla pod cut into 4, 4 cardamom pods, 2 tablespoons freshly squeezed orange juice. Place each banana in the middle of individual sheets of lightly greased foil and make a pocket by sealing up the two sides. Divide ingredients equally and sprinkle over all 4 bananas. Seal up the final side and bake in the oven at 220oC for 10-15 minutes.
