Loaded Bacon

Bacon isn’t just for breakfast. These loaded bacon strips are delicious served as the main part of a lunchbox or as a healthy and tasty snack to keep in the fridge, just in case.

Ingredients:

8 slices bacon
Homemade Guacamole
Homemade tomato salsa
Freshly ground black pepper.

Homemade Guacamole
3 avocados
Juice of 1 lemon/lime (lime is traditionally used with guacamole, but lemons are more easily available)
1 small shallot, finely diced
Sea salt and freshly ground pepper.

1 In a medium bowl, combine the diced shallot, salt, and lemon/lime juice. Set aside for 10 minutes.
2 Pit and peel the avocados. Take half of the flesh and mash it in a bowl with a fork.
3 Pour the lemon/lime mixture into the bowl and combine with the mashed avocado.
4 Dice the remainder of the avocado flesh into 3/4-inch cubes and gently incorporate into the mixture in the bowl.
5 Add freshly ground pepper and a good pinch of sea salt.

Homemade tomato salsa
450g (1lb) ripe tomatoes
A few healthy dashes of Tabasco sauce
1 tablespoon wine vinegar
1 clove garlic, crushed
½ red onion, finely chopped
Sea salt and freshly ground pepper
2 tablespoons fresh basil, chopped
100g (3.5oz) olive oil.

Put all the ingredients in a food processor and blend to a smooth paste

Method:
1 Grill the bacon under a hot grill for 3-4 minutes each side, until the fat is nicely browned. Transfer to a plate to cool.
2 Spoon the Guacamole onto the bacon strips, pressing it down slightly so that it stays in place.
3 Spoon some homemade salsa on top and finish with some freshly ground pepper.

Tip: You can load with just salsa if you don’t want to mix at all, but this is still pretty much a fat meal.
