Do I need to trim the fat off my meat? (I hope not)

No. If you eat meat you are having a fat meal and therefore you can eat meat fat, or any other fat, at the same time. Do you think cave men would have trimmed the fat of meat?! And did you know that lard (pig fat) is more monounsaturated fat than saturated?
