Delicious BBQ marinades, relishes and dips

There’s nothing quite like a BBQ to celebrate the arrival of summer and a bank holiday weekend. BBQ food is super tasty and eating outdoors is healthy too, especially if your eating with friends and family.

BBQ food needn’t just be sausages and burgers, although they are tasty too. Try some BBQ’d vegetables like courgettes, aubergines, peppers and onions and cuts of meat, like pork, lamb and steak. Fish is also delicious BBQ’d. Be creative; try some foods that you may not usually buy.

BBQ ‘leftovers’ are particularly delicious and can be eaten for breakfasts, lunches or suppers, so take advantage of the BBQ being fired up to cook for a few days in advance too,

We like to add some marinades, relishes and dips to our BBQ creations and here are a few for you to try out. They are simple to make and add an extra zing to any BBQ’d dish.

Teriyaki Style Marinade:
100ml Worcester sauce
1 clove garlic, finely chopped
1 tsp ground ginger
1/2 tsp chilli powder

Mix all the ingredients together and pour over lamb, pork or beef (skirt of beef is particularly delicious). Leave to marinate in a cool place for 2-4 hours before cooking. A simple marinade with a nice kick.

Simple Tomato Relish:
450g (1lb) ripe tomatoes
A few healthy dashes of Tabasco sauce
1 clove garlic, crushed
½ red onion, finely chopped
A generous pinch of sea salt
freshly ground black pepper
A decent splash of olive oil
2 tablespoons fresh basil, chopped
1 tablespoon wine vinegar

Liquidise the tomatoes with a food processor or blender and then add all the other ingredients. Whisk with a fork, refridgerate for an hour and serve as a side relish.

Greek Yogurt with Herbs Marinade:
250ml plain Greek yogurt
2 tablespoons lemon juice
2 cloves garlic, minced
1 tablespoon chopped fresh herbs (such as dill, mint, or oregano)
1 teaspoon paprika
A generous pinch of sea salt
freshly ground black pepper

Mix all the ingredients in a bowl until well blended and use to marinate chicken, lamb, or vegetables.

Cucumber Yogurt Dip (Tzatziki):
250ml Greek yogurt
1 cucumber, deseeded, grated and squeezed to remove excess water
2 cloves garlic, minced
1 tablespoon lemon juice
1 tablespoon chopped fresh dill
Sea salt and pepper to taste

Combine all the ingredients in a bowl and mix well. Refrigerate for at least 1 hour before serving. Enjoy with grilled meats, or as a refreshing dip with raw veggies (sliced carrots, peppers, celery sticks etc).

Coriander and Lime Yogurt Dip:
250ml Greek yogurt
Juice of 1 lime
1 large bunch fresh Coriander, chopped
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper (optional)
Sea salt and pepper to taste

Mix all the ingredients together in a bowl until well combined. Refrigerate for at least 30 minutes. Serve with grilled meats and vegetables.
