Loaded Bacon<\/span><\/p>\n

Bacon isn\u2019t just for breakfast. These loaded bacon strips are delicious served as the main part of a lunchbox or as a healthy and tasty snack to keep in the fridge, just in case.<\/p>\n

Ingredients:<\/strong><\/p>\n

8 slices bacon
\nHomemade Guacamole
\nHomemade tomato salsa
\nFreshly ground black pepper.<\/p>\n

Homemade Guacamole
\n3 avocados
\nJuice of 1 lemon\/lime (lime is traditionally used with guacamole, but lemons are more easily available)
\n1 small shallot, finely diced
\nSea salt and freshly ground pepper.
\n<\/a>
\n1 In a medium bowl, combine the diced shallot, salt, and lemon\/lime juice. Set aside for 10 minutes.
\n2 Pit and peel the avocados. Take half of the flesh and mash it in a bowl with a fork.
\n3 Pour the lemon\/lime mixture into the bowl and combine with the mashed avocado.
\n4 Dice the remainder of the avocado flesh into 3\/4-inch cubes and gently incorporate into the mixture in the bowl.
\n5 Add freshly ground pepper and a good pinch of sea salt.<\/p>\n

Homemade tomato salsa
\n450g (1lb) ripe tomatoes
\nA few healthy dashes of Tabasco sauce
\n1 tablespoon wine vinegar
\n1 clove garlic, crushed
\n\u00bd red onion, finely chopped
\nSea salt and freshly ground pepper
\n2 tablespoons fresh basil, chopped
\n100g (3.5oz) olive oil.<\/p>\n

Put all the ingredients in a food processor and blend to a smooth paste<\/p>\n

Method: <\/strong>
\n1 Grill the bacon under a hot grill for 3-4 minutes each side, until the fat is nicely browned. Transfer to a plate to cool.
\n2 Spoon the Guacamole onto the bacon strips, pressing it down slightly so that it stays in place.
\n3 Spoon some homemade salsa on top and finish with some freshly ground pepper.<\/p>\n

Tip: You can load with just salsa if you don\u2019t want to mix at all, but this is still pretty much a fat meal.<\/p>\n
