Herby Meatballs

Looking for ideas on what to do with minced/ground meat? These meatballs are delicious and simple to make. They’re good enough for a main meal and delicious as Tapas.

Ingredients:

For the meatballs:
450g (1lb) minced beef
1 onion, finely chopped
1 clove garlic, crushed
3 teaspoons dried mixed herbs
Sea salt and freshly ground pepper
1 egg, beaten

For the tomato sauce
1 400g tin tomatoes, chopped
1 tablespoon butter
1 small onion, peeled and halved

Method:
1 Pre-heat the oven to 200° C, 400° F, Gas 6.
2 Put the minced beef, onion, garlic, herbs, salt and pepper in a mixing bowl and thoroughly mix together. Then mix in the beaten egg.
3 Take a small amount of the mixture and make approximately 20 golf ball sized meat balls, placing them on a baking tray when you’ve made them.
4 Pop in the oven and roast for about 30 minutes, until the meat browns. Remove from the oven to cool.
5 To make the tomato sauce, put the tomatoes, butter and onion in a small saucepan, bring quickly to the boil then cover and simmer for 30 minutes.
6 Remove and discard one half of the onion and then quickly blitz the remaining ingredients with a hand blender until you get a smooth sauce.
7 To Serve, divide the meatballs equally and then spoon over the tomato sauce.
