White Chilli

This is a different take on the usual Chilli con Carne, this is made with chicken. Try to find tinned Jalapenos for this recipe NOT the ones in jars that will blow your head off (unless of course you like you head blown off, in which case go ahead!!LOL) This will make 4 good servings. Add haricot beans to this if you wish or diet allows.

Ingredients:
3 cooked chicken breasts
3 tbs olive oil
3 cloves of garlic,crushed
2 tsp ground cumin
1/2 tsp cinnamon
2 tsp oregano or marjoram
1 tsp cayenne pepper (more if desired)
I tin jalapeno chillies
1 pint chicken stock
1 medium parsnip diced
1 med courgette diced
2 carrots diced
1 med onion, diced
salt and fresh ground black pepper
2 tsp lemon juice
2 tbs chopped coriander

Method:
Gently fry the vegetables in the olive oil till golden, be patient may take 10 mins.
Shred the cooked chicken meanwhile.
Add the spices to the golden vegetables and season well, stir and cook for 2 mins, add the stock and the tinned chillies and the chicken. Cook on simmer for 20-30 mins till stock is well reduced and has formed a sauce. Taste and adjust seasonings and heat level, now add lemon juice, stir and taste again as you may need a little more salt at this stage. Sprinkle with coriander and serve.
